Whose getting excited about the Superbowl?

To be perfectly frank, this is one of the years that I didn’t have to look it up to remember it was football. Sad, no? I am just not that into sports. But, I really do love Superbowl parties. Party food, fellowship, and one year I even watched the game.

That was the year I contributed a bowl of pasta salad to all of the wings, meatballs, and dips.

While I still don’t know anything about sports, I think I have a better idea of what one should take to a Superbowl party. Even when doing whole30 (doing a second round right now) and needing to be allergy free.

I was hoping to publish a chicken wing recipe, but our town seemed to be out. I checked two stores, and know the third one I usually go to never carries them. Oh well.

The blogosphere is busting with chicken wing recipes anyway, so how about some chicken bites? Freshly crisp peppers, tender smoky chicken, and then of course…

RANCH!

An egg-free, dairy-free, and nut-free ranch that is. Still absolutely delicious with those classic ranch flavors. I know Ranch gets a bad rap, but I really like my ranch. It added the perfect creamy, garlic-y, and dill bite to the top of these.

All in all, they are the perfect little game-day bites.

Smoky Ranch Chicken Bites (whole30 legal)

Crisp sweet peppers are filled with smoky chicken and topped with homemade ranch.
Ingredients
  • 1½ lbs boneless skinless chicken thighs, cut into ½" chunks
  • 1 tablespoon smoked paprika
  • 1½ teaspoon salt
  • 2 tablespoons nutritional yeast (optional, for a slight cheesy flavor)
  • ½+ teaspoon chipotle (this is somewhat spicy, increase for more heat)
  • 2 teaspoons ghee/oil (any heat stable oil)
  • 1 lb bag sweet mini peppers
  • For topping:
  • Ranch dressing (I used my homemade whole30 legal allergy free ranch see notes for more homemade options if you don't need it egg and/or dairy free)
Instructions
  1. Cook the cubed chicken, paprika, salt, nutritional yeast, chipotle, and ghee/oil in a skillet over medium heat. Mine took about 7 minutes. Set aside. (I then refrigerated for cold bites, and enjoyed it that way, but you can serve warm or cold.)
  2. Slice the peppers in half. Remove the membranes and seeds with a small spoon.
  3. Put a few pieces of the chicken into each pepper. Top with ranch. I put my ranch into a condiment container (see picture) for more control in topping the peppers.
Notes
I used my homemade allergy free and whole30 legal ranch. I know not everyone here will need to make ranch that is dairy and egg free so here is a classic ranch dressing.
