Yeah for Friday!
I am so ready for the weekend, it has been a LONG LONG WEEK. Not entirely bad, but the last two days have seem to lasted a few years. The kids are getting very cabin feverish, and I have not felt up to taking them anywhere because I feel extremely blah. They also assumed that snow meant Christmas, and have been begging to start the festivities.
Their excitement is fun, but explaining for the 100th time that it is not quite Christmas time and seeing their faces drop has lost it’s appeal. Christmas, will be here soon enough, but it is still fall, and we haven’t even had thanksgiving yet. One thing at a time.
I had a blogger brain fart, and totally forgot to prepare yummy thanksgiving treats a few months/weeks ago to post about. I love thanksgiving, but many of the dishes I will be serving this year are so traditional Thanksgiving, that making them before Thanksgiving so I could write about them wasn’t really even something I thought about. Next year I will have to prep some recipes in the Summer so I am not getting so close to Thanksgiving it seems weird in my mind to make those classic dishes in October.
But, I do have a fun fall treat to share today.
I mentioned Wednesday on my Healthy Caramel Post that I had a fun way to serve it coming up. I originally saw these on a friends facebook page, and they looked just so fun. I love caramel and apples together, so of course I had to try making apple nachos with it.
After I had made the healthy caramel for the first time, I knew I wanted a fun way to serve it up. I had some beautiful apples around, and chocolate chips left over from making a batch of Pumpkies, so this is what I came up with. It was so yummy! I think I might try another version with a different sauce (maybe a date chocolate one) that Natalia can enjoy too because I could see this as a fun family treat.
- ~1 cup healthy caramel sauce (I have the sunbutter version pictured here)
- ~1/4 cup enjoy life chocolate chips
- Crisp eating apples (I used three pretty large ones)
- Chopped nuts (such as pecans, almonds, cashews) or toasted pumpkin or sunflower seeds. Toasted coconut would also make a yummy crunchy addition if nuts are a problem.
- If using caramel from the fridge, gently heat it up. You don't want it hot, but it will need to be runny.
- Arrange apple slices on a large plate, or similar size serving platter. I did it in a circle so everything could be well covered.
- Drizzle on caramel, and sprinkle with chocolate chips and chopped nuts or seeds. Toasted coconut would also make a delicious addition if desired/can't have nuts.
