Happy Thanksgiving week everyone!

Thanksgiving is extra special for me, because I was born on it. My Mom was salting the turkey when the contractions started, she got hospital food instead of her homemade feast. Hopefully my snugly baby adorableness made up for that- but still sorry Mom.

This year my birthday doesn’t fall on Thanksgiving, which I think I prefer, but it still is a fun time for me. I actually turned 25 yesterday, which means my brain should be fully developed now. I have never had a bittersweet birthday yet, but this one kind of is. I feel like I am really, truly grown up, and I feel like I should already be something remarkable and great. Which is probably totally silly.

But, as serious as a birthday this one seems to be, there is not one ounce of me that thinks it is time to give up childhood classics. Bring on the chicken nuggets, fish sticks, ketchup, and of course, SLOPPY JOES. If you thought I posted those recipes because I thought my kids would like them…think again. While that is true, I still get giddy excited over many childhood favorites.

Growing up has helped me adapt them a bit though. In the case of these sloppy joes, that means using natural beef, a healthier sweetener, adding in at least some vegetables, and serving them the easily gluten free way — stuffed in baked potatoes.

While I like a good slice of bread- right now that is a struggle for our family. Gluten free bread is time consuming to make, expensive to buy, and hard to find a version everyone in our house can have. So we go the easy route any time we can, and think of new ways to serve old favorites.

Sweet and tangy meat paired with a fluffy baked potato is a fantastic match. I think I like this version even better than the classic version I had, and loved, growing up.
